Mom’s Macaroni and Tomatoes
Mom’s Macaroni and Tomatoes
8-9 fresh medium tomatoes, peeled, cored, and quartered
(or 2 - 1 lb. cans stewed tomatoes)
1 cup elbow macaroni, uncooked
1 medium onion, diced
1/2 can chicken broth and 1/2 cup water, or 1 can chicken broth
1/4 small green pepper, chopped
2 Tbs. brown sugar
1/4 tsp. basil
1/8 tsp. dillweed, or 1/8 tsp. thyme
salt and pepper to taste
dash Cayenne pepper powder
Place tomatoes in a stew pan. Add onion, green pepper, broth and\or water, sugar, and spices. Bring to a boil, add uncooked macaroni. Cook 20 minutes, stirring often.
