Minestrone Soup
Minestrone Soup
4 (14 1/4 ounce) cans beef broth
2 cups coarsely chopped cabbage
1 (14 1/2 ounce) can Italian style stewed tomatoes
1 each medium onion and carrot, sliced
1 Tbs. dried Italian seasoning
1 (10 ounce) package frozen Italian green beans
1 large zucchini, halved lengthwise and sliced
1/2 cup dry bow-tie pasta or elbow macaroni
1 (15 to 16 ounce) can garbanzo or red kidney beans, drained and rinsed
Grated Parmesan cheese
Heat first five ingredients in large heavy pot to a boil; reduce heat. Cover and simmer 20 minutes. Add green beans, zucchini and pasta. Simmer uncoverd, for 15 minutes or until vegetables and pasta are tender. Add garbanzo or kidney beans; heat through. Serve with cheese.
