Coca-Cola Cake & Frosting

Coca-Cola Cake & Frosting

Ingredients:

2 C Sifted all-purpose flour
1-1/2 t Baking soda
1 t Salt
1-1/3 C Sugar
1/2 C Cocoa
1/2 C Shortening
2/3 C Buttermilk
2/3 C Coca-Cola
1 Egg
2 Egg yolks

Directions:

Preheat oven to 350¡F. Grease and flour two 9-inch cake pans.

Into large electric mixer bowl, sift together the sifted flour, baking soda, salt, sugar and cocoa. At low speed, add the shortening, buttermilk and Coca-Cola, and mix for 2 minutes, scraping sides of bowl as needed. Add the egg and egg yolks, and continue to beat for 2 minutes.

Pour batter into prepared cake pans. Bake at 350¡F for 30 to 35 minutes, or until cake tester comes out clean. Cool and frost with Coca-Cola frosting or frosting of your choice.

Coca-Cola Frosting:

Ingredients:

2 Egg whites
3/4 C Sugar
1/3 C Light Karo syrup
1/3 C Coca-Cola
1/4 t Salt
1/4 t Cream of tartar

Combine all ingredients in top of double boiler. Cook over rapidly boiling water, beating continuously with a portable elctric mixer, until mixture stands in peaks. Remove from heat, and continue beating until thick enough for spreading.

Notes: Do not use Diet Coke for this recipe, please.
