Butter cookies
Butter cookies
1 cup butter
1/2 cup sugar
2 cups flour
1 teaspoon lemon
1/2 teaspoon salt
Cream butter, add sugar. Mix well. Add remaining ingredients and blend well. Chill. Flatten 1 teaspoon dough on baking sheet. Bake at 400 degrees until brown.
Filling:
1 egg slightly beaten
2/3 cup sugar, grated rind of one lemon
3 tablespoons lemon juice
1 1/2 tablespoons butter
Blend in double boiler, stirring until thick. Place small amount between 2 cookies.
