BAR- B-Que Sauce
Ingredients:
1 Tablespoon Extra Virgin Olive Oil
2 Medium Yellow Onions – finely chopped (yields 2 cups)
1 Tablespoon Minced Garlic
8 Ounces of whole Button Mushrooms - finely chopped (yields 1 ½ cups)
1 Tablespoon Chopped Parsley Flakes
½ Tablespoon Chopped Basil
1 Tablespoon Italian Seasoning
1 ½ Gallons Tomato Ketchup
12 Ounces Dark Molasses
1 ½ Cups water
In 8 quart heavy pot (do not use cast iron), add Olive Oil, heat oil over med-low heat. Add Onions and Garlic, sauté using a wooden spoon over med-low heat for 5 minutes stirring constantly until the onions are translucent. Add Mushrooms, Parsley, Basil and Italian Seasoning to pot, blend all ingredients completely and continue sautéing and stirring constantly for an additional 5 minutes. All of mixture should be tender and moist.
Add Tomato Ketchup to pot, use 1 cup of water at this point to rinse the ketchup container add the water to pot. Blend well and continue heating over med-low heat for 30 minutes, mixture should be warmed completely through.
Add Molasses to pot, use ½ cup of water at this point to rinse the molasses container add the water to pot. Blend the molasses completely into the mixture. Heat uncovered over med-low heat, stir the mixture well when the sauce forms a slight froth (bubbling of the tomato) in the center of the pot, be sure to scrape the sides of the pot to pull all the mixture together. Continue to cook the mixture for 2 hours over med-low heat. Allow mixture to cool slightly, mixture will thicken as it cools. When mixture is cooled but not cold it can be placed into the desired storage containers. Process containers as required.
Yields 4 Quarts and 1 Pint of Bar-B-Q Sauce.
