Captain’s BBQ Sauce

Captain’s BBQ Sauce

3 Cups Vegetable Oil
3 Large Onions
¼ Cup Chopped Garlic
1 Cup Maple Syrup
16 oz. Vinegar
32 oz Tomato Ketchup
1 Can Tomato Paste
4 oz Lemon Juice
1/2 Cup Worcestershire Sauce
12 oz Coca Cola (Beer Optional)
3 Cups Brown Sugar
1 Tbsp. Salt
2 Tbsp. Tabasco Sauce
2 Tbsp. Liquid Smoke flavoring

Place cooking oil in medium size pot. Add 3 large onions (thin sliced onion ring style) and ¼ cup chopped garlic bring to low boil in oil for 10 minutes. Pour in 16oz vinegar and 4oz lemon juice, boil 10 minutes or until onions and garlic dissolve. Pour in 32oz ketchup and 1 can tomato paste. (Stirring often) Let simmer 15 minutes. Dissolve 3 cups of brown sugar in 12oz coke and Worcestershire sauce, add to mixture. Let simmer for 5 minutes. Add all other ingredients. Cook on low heat for 15 minutes.
