Honey-Fried Walleye

Ingredients
8 large walleye fillets
2 cups butter-flavored cracker crumbs
2/3 cup oil
1 egg slightly beaten
1 teaspoon honey
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon nutmeg

Preparation
1. Wash Dry fillets thoroughly. Dry on paper towel
2. Place oil in 10″ skillet and heat to 375 F.
3. Mix honey and eggs together
4. Combine cracker crumbs, flour, salt, pepper, and nutmeg
5. Dip fillets in egg mixture and then coat with cracker mixture
6. Fry until golden brown, approximately 3 minutes on each side.
