Poke Greens
Poke Greens
Pick poke in the Spring when the shoots are young and tender. Wash the poke and check for bugs. Put clean poke in a large pan, cover the poke with water, and boil until tender, about 20 minutes. Drain off the green water and discard. Place the poke in a skillet, add 2 or 3 Tbs. bacon grease or butter. You can add 1 Tbs. of chopped onion if you like. Fry the poke until it is wilted and tender. Remove from heat, add vinegar and salt to your taste. It is great with brown beans and cornbread.
