Ken’s Salsa

10 cups tomatoes, peeled and chopped
(see recipe on How to Can Tomatoes for an easy way to remove peelings)
1 large onion, chopped
6 Anaheim Peppers, seeded and chopped
2 Pasilla Peppers, seeded and chopped
2 Serrano Peppers (more as desired for more heat), seeded and chopped
4 heaping tsp. Chopped garlic
1\4 – 1/2 cup cider vinegar
1 Tbs. Salt
1\2 tsp. Cumin
1/2 tsp. Cilantro (dry flakes), or fresh is better (2 Tbs.+)
2 Tbs. Sugar, or more to taste
Caution: Be sure to wear rubber gloves when seeding and chopping hot peppers, so that you will not bum your hands from the hot pepper oil. If you do burn your hands: try washing your hands in lemon or lime juice, and take ibuprofen.
Mix all of the ingredients. Bring to a boil. Cook until liquid is reduced to desired consistency. Stir frequently to prevent scorching. Freeze in containers.
